Destilería El Pandillo sits in Jesús María in the Los Altos de Jalisco highlands, founded by engineer Felipe Camarena after 2011 on family agave land to revive Camarena lineage craft with a modern, sustainable bent; the distillery is coded NOM 1579 and is known for slow-cooked highland agave, open-air fermentations with bagasse, copper pot distillation, a custom-built “Felipestein” mill for gentle extraction, and a water program that blends harvested rainwater with deep well sources to shape texture and minerality while recycling energy and process water. Built largely from repurposed materials and designed for gravity efficiency, El Pandillo emphasizes mature highland agave from red clay soils, additive-free transparency, and batch-by-batch adjustments tied to field and season. Beyond its flagship work, the distillery has produced notable tequilas such as G4, Terralta, Volans, and ArteNOM Selección de 1579.
