Ilegal Mezcal was born from Oaxaca’s Santiago Matatlán, where founder John Rexer began sourcing small lots in the early 2000s for Café No Sé in Antigua, Guatemala, then formalized the brand around 2006 to legally bring artisanal mezcal to international bars; production centers on valley-grown espadín pit-roasted in earthen ovens, stone-milled, and twice distilled in copper with no additives, backed by fair-wage sourcing and community initiatives tied to Oaxaca’s agave culture. Beyond its core expressions, the producer also releases limited extra añejo and special cask projects and has put out seasonal pechuga-style bottlings and ready-to-serve mezcal cocktails.
